We love Mexican food in our household, and have it on a weekly basis. Not every time do we have rice with our fiesta, but when we do, this is my go-to recipe. It’s incredibly easy and simple enough to go with any meal. See my full recipe below.

Recipe | Easy Mexican Rice | Everyday with Sarah

Easy Mexican Rice
Serves 4

Ingredients:
2 cups jasmine rice
1 1/2 cups chicken broth
1 can diced green chilies
3 cloves minced garlic
2 diced tomatoes
2 tsp oregano

Instructions:
1. Drain your green chilies and rinse your rice well.
2. Combine all ingredients in rice cooker or in saucepan.
3. If using a rice cooker, allow to cook and stay on warm until mixture is less wet, stirring occasionally. If cooking in saucepan, cook according to rice directions, stirring occasionally.

Seriously, so easy right? We use a rice cooker to make ours, and I highly recommend it. It’ll make your life so much easier.
