Vietnamese Pho
Serves 4

Ingredients:
8 cups low sodium chicken broth
1 box rice noodles
1 1/2 lb chicken breasts
3 chopped green onions
Handful fresh cilantro to garnish
Fresh lime juice
Sriracha Chili Sauce

Instructions:
1. Combine chicken broth and rinsed chicken breasts into crock pot. Leave chicken breasts whole, but fat trimmed. Cook for 3-4 hours on low.
2. Remove chicken, shred and put back into crock pot. Add rice noodles and green onions, stir.
3. Cook for an additional 5 minutes, or until noodles are soft.
4. Serve in bowls and garnish with lime juice, cilantro, and sriracha sauce.
