We have a strong love for Asian foods and easy meals, and this chicken pho is both. I’ve discovered how to make homemade Vietnamese chicken pho in the crockpot – the ultimate weeknight meal. Now that the weather is finally cooling off a bit, we have been adding in soups throughout the week. In just a few easy steps, here’s how I make pho at home.
8 cups low sodium chicken broth
1 box rice noodles
1 1/2 lb chicken breasts
3 chopped green onions
Handful fresh cilantro to garnish
Fresh lime juice
Sriracha Chili Sauce
1. Combine chicken broth and rinsed chicken breasts into crock pot. Leave chicken breasts whole, but fat trimmed. Cook for 3-4 hours on low.
2. Remove chicken, shred and put back into crock pot. Add rice noodles and green onions, stir.
3. Cook for an additional 5 minutes, or until noodles are soft.
4. Serve in bowls and garnish with lime juice, cilantro, and sriracha sauce.
